Refreshingly bright salad with peas, avocado, spinach, and herbs. Customize with your favorite herbs. Green goddess dressing with lemon, garlic, mayo, and sour cream. A wholesome one-dish dinner with chickpeas and spinach.
Ingredients:
  • 1 box Betty Crocker™ Suddenly Salad™ classic pasta salad mix
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lemon juice
  • 1/4 teaspoon garlic powder
  • 1 can (19 oz) Progresso™ chick peas, drained, rinsed (about 1 3/4 cups)
  • 1 cup coarsely chopped baby spinach
  • 1/2 cup frozen sweet peas, cooked as directed on bag, cooled
  • 1 small avocado, peeled and cut into small cubes (about 1 cup)
  • 3 tablespoons chopped fresh Italian (flat-leaf) parsley
  • 3 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh basil leaves
Instructions:
  • Add the pasta from the Suddenly Salad box into a large saucepan filled 2/3 with boiling water. Boil gently without a lid for 12 minutes, stirring occasionally. Once cooked, drain the pasta and rinse with cold water. Let it drain well before using.
  • Combine seasoning mix from the Suddenly Salad box with mayonnaise, sour cream, lemon juice, garlic powder, and salt in a large bowl to create a flavorful dressing.
  • Combine pasta, chickpeas, spinach, peas, avocado, parsley, chives, and basil with the dressing in a bowl; gently toss to coat. Serve right away or refrigerate until ready to serve.
