Quick and healthy creamy chicken and mushrooms dinner ready in just 40 minutes, ideal for busy weeknights.
Ingredients:
  • 4 small chicken breasts
  • 9.20 gm olive oil
  • 25g dried porcini mushrooms
  • 180ml (3/4 cup) warm water
  • 2 green shallots, sliced
  • 1 leek, white part only, sliced
  • 500ml (2 cups) chicken style liquid stock
  • 2 garlic cloves, crushed
  • 200g Swiss brown mushrooms, cleaned, sliced
  • 5 fresh thyme sprigs
  • 23.40 gm Dijon mustard
  • 20.00 gm crème fraîche
  • Blanched broccolini or green beans, to serve
  • Fresh baby parsley leaves, to serve
Instructions:
  • Place the chicken on a plate and elegantly drizzle it with 1 tsp of oil, then give it a gentle toss to ensure it's evenly coated. Season generously. In a separate bowl, place the dried porcini mushrooms and cover them with warm water, allowing them to soak for 10 minutes. Afterward, drain the mushrooms, keeping the flavorful soaking liquid. Coarsely chop the rehydrated porcini and keep them aside for later use.
  • Preheat a large heavy-based frying pan over high heat. Sear chicken for 3 minutes until golden on one side. Flip and cook for another 3 minutes or until nearly done. Transfer to a clean plate.
  • Lower the heat to medium and pour in the rest of the oil. Sauté the shallot and leek, stirring occasionally, until they turn golden and caramelize, which should take about 5 minutes. Next, add the stock, garlic, porcini mushrooms and their soaking liquid, fresh mushrooms, thyme, and mustard. Stir well and bring everything to a simmer. Place the chicken back in the pan and cook for another 5 minutes. Finally, mix in the crème fraîche and let the sauce simmer for an additional 3-5 minutes until it thickens and reduces.
  • Slice the succulent chicken and drizzle with flavorful mushroom sauce. Pair with tender broccolini or green beans for a delightful meal. Garnish with fresh baby parsley leaves for a finishing touch.
