Creamy mushroom chicken pasta with whole wheat penne.
Ingredients:
  • 1 (8 ounce) package whole wheat penne pasta
  • 3 tablespoons minced garlic
  • 1 pound skinless, boneless chicken breasts, cubed
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 (10.5 ounce) can fat-free cream of mushroom soup
  • 0.5 cup water, or as needed
  • 1 pinch garlic salt, or to taste
  • 1 pinch red pepper flakes, or to taste
Instructions:
  • Fill a large pot with seasoned water and bring it to a lively boil. Add penne pasta and cook it uncovered, stirring occasionally, until al dente, approximately 11 minutes. Drain the pasta.
  • Sauté olive oil and garlic in a large skillet over high heat until browned and fragrant, around 2 minutes. Add chicken and mushrooms, ensuring they are well coated with the garlic and olive oil mixture. Cook chicken until fully cooked and no longer pink in the center, about 6 to 8 minutes. Finally, mix in the cream of mushroom soup. Slowly incorporate 1/2 cup of water, about 1 tablespoon at a time, until the sauce reaches a light and creamy consistency.
  • Lower the heat to medium-low and delicately mix the pasta into the chicken and sauce until well coated. Season with garlic salt and red pepper to your liking, then take it off the heat and serve.
