Flavorful balsamic chicken with nutrient-rich mushrooms for a healthy, low-calorie meal bursting with taste. Perfect for a quick and delicious weeknight dinner.
Ingredients:
  • 48.80 gm Worcestershire sauce (see tip)
  • 5.90 gm Dijon mustard
  • 2 tsp chopped fresh rosemary leaves
  • 2 (250g each) chicken breast fillets, halved horizontally
  • 80ml (1/3 cup) ) Massel Organic Salt Reduced Chicken Liquid Stock
  • 1.25 gm cornflour
  • 27.30 gm extra virgin olive oil
  • 1 leek, trimmed, thinly sliced
  • 200g button mushrooms, thinly sliced
  • 150g Swiss brown mushrooms, thinly sliced
  • Chopped fresh continental parsley leaves, to serve
  • Steamed green beans, to serve
Instructions:
  • In a jug, mix balsamic vinegar, Worcestershire sauce, Dijon mustard, and either fresh rosemary or thyme. Pour half of the mixture into a shallow glass or ceramic dish. Place the chicken in the dish, ensuring it's coated with the marinade. Cover and refrigerate for a minimum of 30 minutes.
  • In a small jug, mix together the stock, cornflour, and the rest of the balsamic mixture.
  • In a large non-stick frying pan over medium-high heat, heat 2 tsp oil. Cook the chicken for 3-4 minutes on each side until golden and nearly cooked through, then transfer to a plate.
  • Lower heat to medium. Heat the rest of the oil in the pan. Sauté leek for 5 minutes until softened. Add mushrooms and garlic, cook for 5 minutes until mushrooms are golden. Add back chicken, pour in stock mixture, simmer for 3-4 minutes until chicken is cooked and mushrooms are tender. Garnish with parsley. Serve with green beans.
