Elevate chicken breast with elegant wine-sauteed mushrooms.
Ingredients:
  • 4 single chicken breast fillets, trimmed
  • salt and cracked black pepper
  • 300g button mushrooms, sliced
  • 82.50 gm white wine
  • 63.75 gm salt reduced chicken style liquid stock
  • 2.50 gm cornflour
  • 2 green onions, finely chopped
  • 20.00 ml finely chopped flat-leaf parsley
Instructions:
  • Preheat the oven to 175°C. Season the chicken with salt and cracked black pepper. Sear the chicken in a non-stick frying pan with a drizzle of oil over medium-high heat until golden on both sides. Transfer the chicken to a baking tray lined with non-stick baking paper and bake until fully cooked.
  • Heat additional oil in the frying pan, then add mushrooms and garlic. Sauté for 4 minutes until golden brown. Transfer to a plate, cover, and set aside to keep warm.
  • Place the pan back on the stove. Pour in the wine and stock and let it simmer for 3 minutes. Combine the cornflour with 1 tablespoon of water until smooth. Pour the mixture into the pan and stir until slightly thickened. Add back the mushrooms, garlic, green onions, and parsley. Divide the chicken onto plates, drizzle with the sauce, and serve with steamed vegetables.
