Golden breaded chicken breasts, baked with Jack cheese, sauteed mushrooms, and a white wine sauce. A family recipe with white Zinfandel, delicious and flavorful. Perfect with asparagus and garlic herb butter angel hair pasta. Simply delightful!
Ingredients:
  • 1.5 cups grated Parmesan cheese
  • 3 eggs, beaten
  • 1.5 cups Italian-style seasoned bread crumbs
  • 3 tablespoons vegetable oil
  • 4 skinless, boneless chicken breast halves
  • 2 cups white Zinfandel wine
  • 2 cups sliced fresh mushrooms
  • 3 cups shredded Monterey Jack cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) while you lightly grease a medium baking dish.
  • Set up an assembly line with three small bowls - one with Parmesan cheese, one with eggs, and one with bread crumbs. Heat oil in a large skillet over medium-high heat. Coat each chicken piece first in Parmesan, then in egg, and finally in bread crumbs. Cook chicken until golden on both sides in the skillet, then transfer to a baking dish.
  • Deglaze the skillet with wine, releasing all the flavorful browned bits. Saute mushrooms for 5 minutes until tender. Layer Monterey Jack cheese evenly on each chicken breast, then spoon mushrooms on top. Pour the remaining wine from the skillet over everything and cover with foil before baking.
  • Bake in the preheated oven for 30 to 35 minutes, or until the chicken is fully cooked and juices run clear.
