Chicken with tomato and tarragon

Freezer-friendly, quick and healthy chicken meal the whole family will love.
Ingredients:
  • 4 single chicken breast fillets
  • 1 brown onion, halved, thinly sliced
  • 200g button mushrooms, halved
  • 125ml (1/2 cup) white wine
  • 2 x 400g cans crushed tomatoes
  • 125ml (1/2 cup) chicken style liquid stock (see note)
  • 62.50 ml fresh tarragon leaves, chopped
  • 62.50 ml fresh continental parsley leaves, chopped
  • Steamed green round beans, to serve
Instructions:
  • In a large, deep frying pan over medium-high heat, heat 2 teaspoons of oil. Season the chicken with salt and pepper, then cook each side for 2-3 minutes until browned. Transfer to a plate.
  • In a pan over medium heat, sizzle the onion, garlic, and mushroom in the remaining oil until tender, about 5 minutes. Pour in the wine and simmer until reduced by half, then mix in the tomato, stock, and tarragon to bring to a gentle simmer.
  • Add the chicken back to the pan and cook for 12-15 minutes, flipping it once, until fully cooked. Season generously with salt and pepper. (Refer to notes for freezing instructions).
  • Plate the chicken mixture and beans evenly among serving plates, then garnish with a sprinkle of fresh parsley.
