Cozy up with a comforting slow cooker chicken stew featuring creamy mushrooms, potatoes, carrots, and beans.
Ingredients:
  • 6 chicken thigh cutlets, bone in, trimmed
  • 2 celery sticks, chopped
  • 200g button mushrooms
  • 4 French shallots, peeled
  • 250ml (1 cup) white wine
  • 40.00 ml plain flour
  • 44.40 gm tomato paste
  • 500ml (2 cups) chicken style liquid stock
  • 20.00 ml chopped fresh tarragon, plus extra sprigs, to serve
  • 350g baby potatoes, halved if large
  • 1 bunch baby carrots, trimmed, peeled
  • 200g green beans, trimmed
Instructions:
  • Preheat a 5L slow cooker on Browning setting. Season chicken, then carefully place skin-side down in the cooker. Sear for 5-7 minutes until golden brown, turning once. Transfer chicken to a plate.
  • While the slow cooker is still on Browning mode, toss in the celery, mushroom, and shallot, and cook until they turn golden and start to caramelize, approximately 5 minutes. Introduce the garlic and sauté for 1 minute. Pour in the wine and let it reduce by half for about 3 minutes. Mix in the flour and tomato paste, stirring constantly for 2 minutes. Slowly pour in the chicken stock while stirring until the mixture is smooth. Bring it to a boil, add the tarragon, and season to taste.
  • Set the slow cooker to Low heat. Place the chicken and potato back into the slow cooker, cover, and cook for 3 hours. After that, add the carrots into the mixture, cover, and cook for another 2-3 hours. During the last 30 minutes of cooking, add the beans until the chicken is fully cooked and the vegetables are tender. Serve the dish garnished with extra tarragon sprigs on top.
