Farmhouse roast chicken

Elevate roast with French farmhouse flair: wild mushrooms, lentils in crème fraîche, and fresh tarragon - a delicious twist you'll adore.
Ingredients:
  • 1 x 1.5 kg free-range whole chicken
  • 1 bulb of garlic
  • red wine vinegar
  • olive oil
  • 3 rashers of higher-welfare smoked streaky bacon
  • 650 g mixed mushrooms
  • 250 g baby spinach
  • 2 x 400 g tins of green lentils
  • 100 g half-fat crème fraîche
  • ½ a bunch of tarragon (10g)
Instructions:
  • 1. Preheat the oven to 180°C/350°F/gas 4. 2. Place chicken and garlic in a roasting tray. Season with salt and pepper, drizzle with red wine vinegar and olive oil, and rub to coat. Roast for 1 hour. 3. Remove chicken from tray and lay bacon over breasts. Squeeze garlic from skins with a potato masher, then add mushrooms to juices in tray. Roast for another 20 minutes. 4. Transfer mushrooms to a platter, place chicken on top to rest. Heat tray juices, add spinach and lentils. Stir in crème fraîche, season to taste. 5. Sprinkle tarragon leaves over chicken before serving. Enjoy!
