Ingredients:
  • 0.75 cup superfine sugar
  • 0.5 cup margarine
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 pinch ginger
  • 1.5 cups self-rising flour
  • 0.25 cup confectioners' sugar
  • 1 pinch cardamom
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a muffin pan with 18 cupcake papers.
  • Combine sugar and margarine in a medium bowl until light and fluffy. Gradually add eggs, mixing well with an electric mixer or blender. Mix in cinnamon and ginger. Fold in flour until fully incorporated. Fill each paper-lined cup with a generous tablespoon of batter and level it.
  • Bake in the preheated oven for 15 to 20 minutes until the tops are springy. Sprinkle with confectioners' sugar and cardamom once cooled.
