Ingredients:
  • 18.40 gm vegetable oil
  • 1/2 tsp cumin seeds
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 100ml Mutti Tomato Passata
  • 300g baby spinach
  • 1/2 tsp ground coriander
  • 1/2 tsp garam masala
  • 1/4 tsp dried chilli flakes
  • 20.00 ml chopped fresh coriander
  • 1 tsp grated ginger
  • 150g boiled waxy potatoes (such as kipfler), peeled, quartered
Instructions:
  • In a pan over medium heat, warm oil. Add cumin and sauté until aromatic. Stir in onion and garlic, cook for 1 minute.
  • Combine passata, spinach, spices, fresh coriander, ginger, potatoes, and 2 tablespoons of water, stirring well.
  • Sauté spinach and potatoes over medium heat for 1-2 minutes until the spinach is wilted and the potatoes are heated through.
