Elevate baked chicken and veggies with Leggo’s Tomato Paste for a rich and delicious sauce.
Ingredients:
  • 140g tomato paste
  • 1 garlic clove, crushed
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 1 tsp dried chilli flakes (optional)
  • 4 chicken marylands (or 1.4kg chicken pieces on the bone)
  • 500g baby potatoes, halved
  • 400g can cherry tomatoes
  • 8 thyme sprigs
  • 60g baby spinach leaves
Instructions:
  • Preheat your oven to 180°C. Mix together tomato paste, garlic, cumin, coriander, and optional chilli in a small bowl.
  • Make 3 slits on top of each chicken piece and generously coat them with a flavorful tomato paste mixture. Arrange the chicken in a spacious roasting pan along with potatoes, onions, cherry tomatoes, and 1/3 cup (80ml) water. Scatter half of the aromatic thyme over the top, spray with olive oil, and season generously.
  • Bake for 1 hour until chicken is perfectly cooked. Add spinach and generously sprinkle with the remaining thyme.
