Cheesy Tomato-Chicken Skillet

Creamy one-pan chicken pasta with tomatoes and basil for an easy, delicious meal with minimal cleanup.
Ingredients:
  • 2 cups uncooked pasta nuggets or radiatore (7 oz)
  • 3/4 lb chicken breast strips for stir-fry
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1 1/2 cups chopped plum (Roma) tomatoes (4 to 5 medium)
  • 1/2 cup milk
  • 2 tablespoons chopped fresh basil
  • 1 cup shredded mozzarella cheese (4 oz)
Instructions:
  • Prepare the pasta according to package instructions. Drain and cover to keep warm.
  • Heat a 10-inch nonstick skillet over medium-high heat until hot. Add the chicken and cook for 4 to 6 minutes, stirring frequently, until it's no longer pink in the center. Reduce heat to medium and add the soup, tomatoes, milk, and basil.
  • Mix in the cooked pasta and cook for about 8 minutes until bubbling and completely heated through, stirring occasionally. Sprinkle with cheese, remove from heat, cover, and let it stand for 2 to 3 minutes until the cheese melts.
