Cheesy baked chicken spaghetti casserole in tomato sauce - perfect for Thanksgiving.
Ingredients:
  • 9 oz uncooked spaghetti
  • 1 cup frozen chopped onions (from 12-oz bag)
  • 1 tablespoon chopped garlic in water (from 4.5-oz jar)
  • 2 cans (14.5 oz each) stewed tomatoes, undrained, chopped
  • 1 tablespoon reduced-sodium Worcestershire sauce
  • 2 teaspoons Italian seasoning
  • 3 cups chopped cooked chicken
  • 2 cups (8 ounces) shredded reduced-fat Cheddar cheese
Instructions:
  • Preheat the oven to 350°F. Grease a 3-quart casserole dish with cooking spray. Cook spaghetti according to package instructions, without adding salt or oil, and cook for the minimum time specified; then drain.
  • Spray a 12-inch skillet with cooking spray and heat over medium-high heat. Cook the onion and garlic for 5 minutes, stirring occasionally. Add the tomatoes, Worcestershire sauce, Italian seasoning, and salt. Bring to a boil, then reduce heat and simmer uncovered for 10 minutes.
  • Take the pan off the heat. Mix in the chicken, 1 cup of cheese, and cooked spaghetti. Transfer the mixture to a casserole dish. Sprinkle the remaining 1 cup of cheese on top.
