Elevate classic nachos with loaded Barbecued Chicken Nachos. Easy, cheesy, and irresistible. Perfect for any party or snack time!
Ingredients:
  • 16 cups corn tortilla chips
  • 3 cups cut-up cooked chicken
  • 1 1/3 cups barbecue sauce
  • 2 cans (15 ounces each) chili beans in sauce, undrained
  • 2 cans (2 1/4 ounces each) sliced ripe olives, drained
  • 2 large tomatoes, chopped (2 cups)
  • 6 cups shredded Colby-Monterey Jack cheese (24 ounces)
Instructions:
  • Preheat your grill for direct heat and generously spray two 30x18-inch heavy-duty aluminum foil pieces with cooking spray.
  • Lay out tortilla chips on foil. Combine chicken with barbecue sauce. Top chips with chili beans, chicken mixture, olives, tomatoes, and cheese.
  • Enclose tortilla chips in foil, ensuring a tight seal. Grill the foil packets, with the seams facing up, over medium heat for 8 to 10 minutes until the cheese is melted.
