Barbecued chicken

Master the art of perfectly chargrilled barbecue chicken to juicy perfection.
Ingredients:
  • 1 orange
  • 1 dried chilli
  • 1½ heaped teaspoons smoked paprika
  • 1½ teaspoons Dijon or English mustard
  • 3 tablespoons runny honey
  • 3 tablespoons ketchup
  • 1 teaspoon olive oil
  • 4 x 120 g skinless higher-welfare chicken breasts
Instructions:
  • Prepare the grill by lighting it and letting the flames die down. Grate orange zest into a bowl, then add dried chilli, paprika, mustard, honey, ketchup, and a splash of olive oil. Season with salt and pepper, mix well, and set aside a few tablespoons of the marinade. Place chicken breasts in the bowl, coat them with the marinade, cover, and let sit for 5 to 10 minutes. Heat a griddle pan over high heat. Cook the chicken breasts for about 5 minutes on each side, basting with the marinade until golden and cooked through. Serve with a spoonful of the reserved sauce.
