Upgrade your mince game with savory crepes for a delicious dinner!
Ingredients:
  • 250.00 ml plain flour
  • 0.63 gm bicarbonate of soda
  • 386.25 gm milk
  • 60g butter, melted, cooled
  • 250.00 ml Greek Style Yoghurt
  • 1000.00 ml cooked Basic mince (see notes)
  • 100g feta, crumbled
  • 3.75 gm ground cumin
  • 1 1/2 tsp ground coriander
  • 250.00 ml mint leaves, roughly chopped
Instructions:
  • In a large bowl, sift flour and bicarbonate of soda and make a well in the center. In a separate bowl, whisk together eggs, milk, and 2 tablespoons of melted butter. Pour the mixture into the flour and whisk until a smooth batter forms, gradually incorporating the flour. Cover and let it stand for 30 minutes.
  • Preheat an 18cm crepe pan over medium heat and lightly brush with some of the leftover butter. Pour 2 tablespoons of batter into the middle of the pan and swiftly swirl to cover the base. Cook until golden and lace-like, about 2 minutes. Flip and cook for another 30 seconds. Plate and continue the process, greasing the pan between each crepe, until you have 16 crepes.
  • Prepare the flavorful filling by thoroughly combining the minced meat, crumbled feta, aromatic cumin, fresh coriander, and a generous portion of mint. Mix until well blended.
  • 1. Preheat the oven to 200°C and grease a 5.5cm deep, 17cm x 26cm (base) ovenproof baking dish. Add 1/4 cup of mince mixture onto one edge of a crepe, then roll up the crepe. Place it into the prepared dish and continue the process with the remaining mince and crepes. Cover the dish with foil and bake for 10 to 15 minutes, or until the crepes are hot.
  • Mix the remaining mint with the yoghurt, then serve alongside the crepes.
