Wholemeal crepes filled with luscious passionfruit and mint yogurt - a delightful dessert!
Ingredients:
  • 187.50 ml wholemeal plain flour
  • 10.00 gm caster sugar
  • 3 eggs, lightly beaten
  • 36.80 gm vegetable oil
  • 257.50 gm milk
  • Canola oil spray
  • 250.00 ml vanilla yoghurt
  • 20.00 ml shredded fresh mint leaves
  • 2 passionfruit, halved (see note)
  • 62.50 ml pistachio kernels, toasted, chopped
Instructions:
  • Sift flour into a bowl and stir in sugar. In a large jug, whisk together egg, oil, and milk. Gradually combine the egg mixture with the flour mixture, whisking until smooth and well combined. Cover and let it sit for 30 minutes.
  • Prepare a non-stick frying pan with oil and heat over medium heat. Pour a 1/4 cup of batter into the pan and swirl to cover the base. Cook until light golden for about 2 minutes, then flip and cook for an additional minute. Transfer to a plate and cover to keep warm. Repeat with the remaining batter to make a total of 8 delicious crepes.
  • Combine yoghurt, fresh mint, and half of the tangy passionfruit pulp in a bowl, gently stirring until well mixed.
  • Fold the crepes in half, then top each with a generous 1 1/2 tablespoons of the delicious yogurt mixture. Fold them in half one more time to seal in the filling. Plate them up and sprinkle with pistachios and the remaining passionfruit pulp. Serve and enjoy!
