Wholemeal crepes with caramel bananas

Ingredients:
  • 75.00 gm wholemeal self-raising flour
  • 75g plain flour
  • 2 eggs (or 3 egg whites)
  • 250ml water
  • 128.75 gm low-fat milk
  • 4 ladyfinger bananas, peeled and halved
  • 36.00 gm sugar
Instructions:
  • Combine the flours, eggs, water, and milk while whisking until smooth. Heat a crepe pan over high heat and lightly coat with olive oil spray.
  • Pour 1/3 cup of the mixture into the pan, swirling it around to evenly cover. Cook for about 1 minute until small bubbles form and the edges become crisp. Flip and cook for an additional 30 seconds. Then, remove from the pan and repeat the process.
  • Coat bananas in sugar and press gently. Heat a non-stick pan over medium-high heat, then caramelize bananas for 1 minute on each side. Serve with ricotta on crepes.
