Cottage Cheese Blintzes

Fluffy crepes filled with sweet cottage cheese, rolled and pan-seared to golden perfection.
Ingredients:
  • 3 eggs
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 0.75 cup all-purpose flour
  • 1 teaspoon vegetable oil, or as needed
  • 2 (16 ounce) containers small curd cottage cheese, very well drained
  • 2 egg yolks
  • 0.25 cup white sugar
  • 2 tablespoons lemon juice
Instructions:
  • In a bowl, combine eggs, milk, and 2 tablespoons of vegetable oil. Slowly incorporate the flour, whisking until smooth.
  • Prepare the skillet by brushing it with 1 teaspoon of vegetable oil and heating it over medium-high heat. Pour approximately 2 tablespoons of batter for each crepe into the skillet and swirl the pan to evenly coat the surface. Cook until the crepes are golden on the bottom and set on top, about 1 to 2 minutes per crepe without flipping. Set the cooked crepes aside.
  • Combine the cottage cheese, egg yolks, sugar, and lemon juice in a bowl until fully incorporated. Spoon approximately 1/4 cup of the cheese mixture into the center of a cooked crepe, then fold the sides over the filling and roll it up tightly to create a compact cheese-filled roll. Repeat with the remaining crepes. Set the blintzes aside.
  • In a large skillet over medium-low heat, warm 1 teaspoon of vegetable oil. Cook the filled blintzes until they are golden brown on both sides, approximately 2 minutes per side. Serve and enjoy hot or cold.
