Brighten up your cottage cheese by adding orange zest, then roll it in a delicate pancake.
Ingredients:
  • 2 tablespoons white sugar
  • 1 teaspoon grated orange zest
  • 0.75 teaspoon salt
  • 1 cup all-purpose flour
  • 0.25 cup milk
  • 0.25 cup vanilla yogurt
  • 2 tablespoons extra-virgin olive oil
  • 4 eggs
  • 1 egg
  • 2 tablespoons unsalted butter, melted
  • 1 (16 ounce) package small curd cottage cheese
  • 5 tablespoons dry bread crumbs
  • 1 tablespoon grated orange zest
  • 2 tablespoons unsalted butter
Instructions:
  • In a small bowl, whisk together 2 tablespoons of sugar, 1 teaspoon of orange zest, a pinch of salt, and flour. In another bowl, mix milk and yogurt. Stir in olive oil until smooth. In a large bowl, beat 4 eggs and then mix in orange juice. Add the yogurt mixture, followed by the flour mixture. Beat until smooth. Let the batter rest at room temperature for 1 hour.
  • Whisk together 1 egg and 3 tablespoons of sugar until smooth, then incorporate butter and cottage cheese until well combined. Mix in bread crumbs and 1 tablespoon of orange zest. Chill the batter until needed.
  • Prepare the skillet by lightly buttering a 6-inch skillet over medium heat. Pour 1/4 cup of batter into the skillet for each crepe, swirling the skillet to spread the batter into a thin, even layer. Cook until the top is set and the bottom is light brown. Gently loosen the edges with a spatula, flip the crepe, and cook until the other side is light brown. Stack the crepes with waxed paper between each in a clean kitchen towel.
  • Spread a generous amount of the filling on the golden side of each crepe, then roll them up. Continue until all blintzes are assembled. In a large skillet, melt butter and fry 4 to 5 blintzes at a time until they are golden brown on each side, about 2 minutes per side.
