Enhance orange-spiced Bundt cake with ground cherries for a delightful fruity twist.
Ingredients:
  • 2.25 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground allspice
  • 0.75 cup unsalted butter, softened
  • 0.75 cup firmly packed brown sugar
  • 3 eggs, at room temperature
  • 0.5 cup pure maple syrup
  • 1.5 teaspoons vanilla extract
  • 1 teaspoon grated orange zest
  • 0.75 cup buttermilk
  • 2 cups ground cherries, husked
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a fluted tube pan, like a Bundt® pan.
  • Combine flour, baking powder, baking soda, cinnamon, salt, cloves, ginger, and allspice in a medium bowl and whisk until well mixed.
  • In a large bowl, use an electric mixer to beat together butter and brown sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in maple syrup, vanilla extract, and orange zest. Stir in 1/3 of the flour mixture until just combined. Then, pour in half of the buttermilk and mix until just combined. Repeat adding the flour mixture and buttermilk alternately, beginning and ending with the flour mixture. Be careful not to overmix. Gently fold in ground cherries and pour the batter into the prepared pan.
  • Bake in the preheated oven for 50-55 minutes or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
