Orange-Sesame Tofu with Broccoli

Experience the deliciousness of tofu in this quick and flavorful Asian dish, perfect for a meatless meal serving four in under an hour.
Ingredients:
  • 1 cup uncooked extra long-grain brown rice
  • 2 1/4 cups water
  • 1/8 teaspoon salt
  • 3 tablespoons sweet chili sauce
  • 3 tablespoons tamari or soy sauce
  • 1 teaspoon toasted or dark sesame oil
  • 1 package (12 oz) extra-firm water-packed tofu, drained, cut into 1-inch cubes
  • 2 tablespoons canola oil
  • 4 cups fresh broccoli florets
  • 1 large red bell pepper, cut into 2-inch strips
  • 2 teaspoons grated orange peel
  • 2/3 cup orange juice
  • 2 teaspoons cornstarch
Instructions:
  • In a 2-quart saucepan, bring rice, 2 cups of water, butter, and salt to a boil. Cover, lower the heat, and let it simmer for 45 to 50 minutes.
  • In a medium bowl, combine chili sauce, tamari, and sesame oil. Add tofu, allowing it to marinate for 15 minutes. Drain tofu, keeping the flavorful sauce for later use.
  • Heat 1 tablespoon of canola oil in a 12-inch nonstick skillet over medium heat. Sauté tofu in the oil for about 5 minutes, stirring frequently, until lightly browned on all sides. Set aside.
  • In a skillet, warm up the last bit of canola oil over medium heat. Sauté broccoli and bell pepper for 3 minutes, stirring often. Pour in the remaining 1/4 cup of water and continue cooking for another 2 to 3 minutes until the veggies are crisp-tender. Finally, mix in the tofu, orange peel, and the chili sauce you set aside earlier.
  • Combine orange juice and cornstarch in a measuring cup or small bowl until smooth. Pour into skillet and cook until thickened and heated through. Serve tofu mixture over brown rice.
