Mouthwatering sesame-orange beef stir-fry, perfect for a quick and satisfying family meal.
Ingredients:
  • 3 oranges
  • 0.75 cup water
  • 0.5 cup long-grain brown rice
  • 0.25 cup low-sodium beef broth
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons chili-garlic sauce
  • 2 tablespoons low-sugar marmalade
  • 1 teaspoon toasted sesame oil
  • 0.25 teaspoon salt
  • 1 tablespoon cornstarch
  • 0.75 pound beef shoulder tender, cut into bite-size strips
  • 2 teaspoons vegetable oil
  • 1 carrot, julienned into 2-inch pieces
  • 6 green onions, bias-sliced into 2-inch pieces
  • 1 large red bell pepper, cut into bite-size strips
  • 6 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon toasted sesame seeds
Instructions:
  • Zest and juice 1 orange. Peel and section the other 2 oranges.
  • In a saucepan, bring water and brown rice to a lively boil. Lower the heat to medium-low, cover, and gently simmer until the rice is tender and has absorbed all the liquid, about 45 to 50 minutes.
  • Combine the zesty orange zest, fresh-squeezed orange juice, savory broth, umami-packed soy sauce, spicy chili-garlic sauce, sweet marmalade, fragrant sesame oil, and a pinch of salt in a small bowl. Gradually whisk in the cornstarch until smooth.
  • Spray a wok or large nonstick skillet with cooking spray and heat on medium-high. Stir-fry beef until browned for 2 to 3 minutes, then transfer to a bowl. Stir-fry carrot in vegetable oil for 3 to 4 minutes. Add green onions and bell pepper and stir-fry for an additional 2 to 3 minutes. Finally, stir-fry garlic and ginger for 30 seconds.
  • Add the beef back to the wok and pour in the cornstarch mixture. Cook and stir until the sauce thickens and bubbles. Toss in the orange sections and cook for an additional minute while stirring.
  • Plate the rice evenly among 4 plates, then generously spoon the flavorful beef mixture over each portion, finishing with a sprinkle of aromatic sesame seeds.
