Whip up a quick and nutritious beef stir-fry with bok choy and sesame rice for a satisfying weeknight dinner.
Ingredients:
  • 400g brown rice
  • 80ml soy sauce
  • 60ml sweet chilli sauce
  • 2 oranges, rind finely grated and juiced
  • 2 tsp finely grated fresh ginger
  • 4 beef scotch fillets
  • 1 large bunch bok choy
  • 40g sesame seeds
  • 18.40 gm canola oil
Instructions:
  • Prepare the rice as directed on the package.
  • Combine soy sauce, sweet chili sauce, orange zest, juice, and ginger in a bowl. Place the steaks in a shallow ceramic dish and pour half of the soy mixture over them. Reserve the remaining sauce. Cover and refrigerate for 30 minutes to marinate.
  • Halve the bok choy crosswise, then quarter the stems lengthwise while keeping the bases intact. Toast sesame seeds in a pan for 2 minutes and mix them into the rice.
  • Heat half of the oil over medium-high heat. Sear the steaks for 2 minutes on each side for a medium doneness. Remove from heat and set aside.
  • 1. Wipe the pan with a paper towel, then heat the rest of the oil over medium heat. Add the bok choy stems and stir-fry for 4 minutes. Toss in the bok choy leaves and stir-fry for 1 more minute. Set aside. 2. Pour in the soy mixture, simmer for 1 minute until slightly reduced. Serve the steaks on a bed of rice, topped with the bok choy, and drizzled with the sauce.
