Beef and bok choy stir-fry

Make a delicious beef and bok choy stir-fry in just 20 minutes.
Ingredients:
  • 1kg beef stir fry strips
  • 1 onion, halved, cut into thin wedges
  • 3 garlic cloves, sliced
  • 230g can bamboo shoots, drained
  • 1 bunch bok choy, leaves separated and halved if large
  • 125.00 ml chopped coriander, plus extra sprigs to serve
  • 400.00 gm steamed rice
  • 76.25 gm brand oyster sauce
  • 65.63 gm light soy sauce
  • 62.50 ml brown vinegar
  • 36.00 gm sugar
  • 1 tsp sesame oil
  • 36.80 gm vegetable oil
Instructions:
  • Combine all the ingredients in a small bowl and stir until the sugar completely dissolves to create the sauce.
  • In a hot wok or large frying pan, sizzle the beef for 2-3 mins until browned. Place in a bowl. Toss in the onion and cook until golden, then add garlic and sauté for 30 secs until aromatic.
  • Add the beef back to the wok along with the bamboo shoots, bok choy, and chopped coriander. Stir-fry for 30 seconds, then pour in the sauce and let it come to a boil. Serve the stir-fry in bowls, garnish with coriander sprigs, and enjoy with steamed rice.
