Whip up a quick and delicious beef noodle stir fry for a speedy dinner option.
Ingredients:
  • 400g hokkien noodles
  • 27.30 gm olive oil
  • 500g lean beef stir-fry strips
  • 1 red capsicum, cut into thin strips
  • 230g can water chestnuts, drained, thickly sliced
  • 1 bunch baby bok choy, washed, cut into 4cm pieces
  • 270g jar black bean stir-fry sauce
  • 500.00 ml bean sprouts
  • 60g sliced cashews
Instructions:
  • Place the noodles in a large heatproof bowl and cover them generously with boiling water. Allow them to sit for 3 minutes, then drain and separate.
  • 1. Preheat the wok over high heat, then add 1 tablespoon of oil. Swirl the oil to coat the sides. Stir-fry half of the beef for 1-2 minutes until cooked, then transfer to a plate. Repeat with the rest of the beef.
  • Heat the wok over high heat, then add capsicum and water chestnuts. Stir-fry for 1-2 minutes. Next, add bok choy and 1 tablespoon of water. Cover and cook for 1 minute until the leaves begin to wilt.
  • Add the beef back to the wok along with the noodles and black bean sauce. Stir fry for 1-2 minutes until everything is heated through and mixed well. Remove from heat and mix in the bean sprouts. Top with cashews and serve.
