Beef and tofu in black bean sauce

Upgrade your classic black bean sauce with honey soy marinated tofu for a flavorful twist.
Ingredients:
  • 400g beef rump steak, thinly sliced
  • 10.60 gm soy sauce
  • 2 garlic cloves, chopped
  • 36.40 gm peanut oil
  • 1 small red chilli, deseeded, thinly sliced
  • 1 small brown onion, cut into thin wedges
  • 1 red capsicum, sliced
  • 200g choy sum, cut into 5cm lengths
  • 200g honey soy marinated tofu, chopped (see note)
  • 80.63 gm black bean sauce
  • Steamed white rice, to serve
Instructions:
  • In a bowl, mix together the beef, soy sauce, and garlic until well combined. For optimal flavor, refrigerate the mixture for 15 minutes, if possible.
  • Prepare vegetables while you heat a wok over high heat and add half of the oil. Coat the wok by swirling it. Stir-fry beef in batches for 2 to 3 minutes to seal, then transfer to a plate.
  • Heat the remaining oil in a wok. Add the chili, onion, and capsicum, stir-fry until vegetables are softened. Then add choy sum, tofu, and beef, stir-fry until heated through.
  • Stir in rich black bean sauce and cold water. Sauté for 1 to 2 minutes until warmed. Enjoy with rice.
