Beef and black bean noodles

Elevate traditional Chinese noodles with a contemporary flair.
Ingredients:
  • 375g rice stick noodles
  • 40.00 ml Black Bean & Garlic Sauce
  • 20.00 ml finely grated fresh ginger
  • 1/4 tsp Chinese five spice
  • 40.00 ml mirin or rice wine vinegar
  • 450g lean beef round centre steaks
  • 1 tsp sesame oil
  • 3 green shallots, ends trimmed, thinly sliced diagonally
  • 50g snow pea sprouts
Instructions:
  • Place the noodles in a spacious heatproof bowl and cover with ample boiling water. Allow to sit for 5 minutes until tender. Drain thoroughly before transferring to a serving bowl.
  • Mix black bean & garlic sauce, ginger, five spice, and 2 teaspoons of mirin in a medium glass or ceramic bowl. Add steaks and coat them evenly. Preheat a non-stick chargrill pan or barbecue flat plate on high heat. Grill the beef for 2-3 minutes per side for a medium doneness, or until cooked to your preference. Transfer to a plate, cover with foil, and let it rest for 5 minutes before serving.
  • In a jug, mix together the sesame oil and remaining mirin. Pour the mixture over the noodles. Add the shallots, rocket, and snow pea sprouts, then gently toss until everything is just combined.
  • Slice the beef thinly and combine it with the noodle mixture along with any pan juices. Toss to combine well, then divide into serving bowls to enjoy.
