Delicious grilled beef and black bean noodles with Asian flavors.
Ingredients:
  • 80.63 gm black bean sauce
  • 33.00 gm sweet chilli sauce
  • 21.00 gm soy sauce
  • 1cm piece fresh ginger, finely grated
  • 21.00 gm lemon juice
  • 2 garlic cloves, crushed
  • 500g piece beef rump steak, halved
  • 1 red capsicum, roughly chopped
  • 115g punnet fresh baby corn, halved diagonally
  • 2 baby bok choy, quartered
  • 4 green onions, trimmed, cut into 5cm lengths
  • 3 tsp sesame oil
  • 200g packet dried wide rice noodles (see note)
  • 40.00 ml fried shallots (see note)
Instructions:
  • In a bowl, mix together sauces, ginger, lemon juice, and half of the garlic. Set aside 2 tablespoons of the sauce. Place the rest of the sauce in a large glass or ceramic dish. Add the beef, ensuring it is coated in the marinade. Refrigerate for 2 to 3 hours, if possible.
  • Preheat a greased barbecue hotplate or chargrill pan over medium-high heat. Combine vegetables, oil, and remaining garlic in a large bowl, toss well. Grill vegetables for about 5 minutes until lightly charred and tender, turning occasionally. Transfer to a large bowl and cover to keep warm.
  • Sear beef for 4 to 5 minutes on each side for a medium cook or until preferred doneness. Place on a plate, cover loosely with foil, let it rest for 5 minutes, then slice thickly.
  • While the noodles are cooking according to the instructions on the packet, make sure to drain them. Add the cooked noodles and the reserved sauce to the vegetables. Gently toss everything together. To serve, top the noodle mixture with beef and sprinkle with shallots before enjoying.
