Refreshing summer salad perfect for any meal.
Ingredients:
  • 70g (1/2 cup) sesame seeds
  • 3 (about 850g) oranges, rind finely grated, juiced
  • 57.20 gm honey
  • 1kg (about 7 medium) carrots,peeled, coarsely grated
  • Salt & ground black pepper, to taste
Instructions:
  • Toast sesame seeds in a non-stick frying pan over medium-high heat, stirring often, for 4-5 minutes until golden. Transfer to a large serving bowl.
  • Combine the orange rind, 250ml (1 cup) of orange juice, and honey in the pan. Cook over medium heat, stirring occasionally, until the honey melts and the mixture is warm, about 3-4 minutes.
  • Combine the carrot, warm orange dressing, and sesame seeds, tossing gently to mix. Season with salt and pepper to taste.
