Versatile orange and carrot marmalade perfect for breakfast or dessert.
Ingredients:
  • 4 oranges, pips removed, finely sliced
  • 625.00 ml carrot, peeled, coarsely grated
  • 1 lemon, juiced
  • 1800.00 gm white sugar
  • 40.00 ml whisky or Grand Marnier
Instructions:
  • In a large bowl, immerse the oranges in cold water until just covered. Cover and let sit overnight.
  • In a large saucepan, pour in an additional 3 cups of water and bring to a boil. Reduce heat to low and simmer for 35 minutes or until tender.
  • Add the carrots and fresh lemon juice to the pot and bring to a vigorous boil. Next, incorporate the sugar, stirring until completely dissolved. Simmer the mixture without a lid for around 30 minutes, or until it reaches the desired thickness (to check, spoon a bit onto a chilled plate, gently push with your finger to see the marmalade set).
  • Stir in the whisky until well combined. Transfer the mixture into sterilised jars and seal immediately while still hot.
  • Enjoy spread on a slice of toast or use as a flavorful foundation for steamed pudding.
