Make a delicious carrot and orange soup with just 5 ingredients.
Ingredients:
  • Olive oil spray
  • 1 brown onion, finely chopped
  • 1kg carrots, peeled, coarsely chopped
  • 1L (4 cups) chicken style liquid stock or vegetable liquid stock
  • 1 orange
  • 40.00 ml fresh continental parsley leaves
Instructions:
  • Heat a large saucepan over medium heat, then spray with oil. Cook the onion for 3 minutes until soft, then add the carrot and cook for another 5 minutes until just soft, stirring occasionally throughout.
  • Pour in the stock and bring it to a boil. Peel off 2 strips of orange rind and add them to the pan. Lower the heat to medium-low and simmer for 20 minutes, or until the carrot is tender. Remove and discard the orange rind before serving.
  • Allow to cool for 5 minutes, then blend with a stick blender until smooth. Juice the orange and stir it into the soup. Heat over medium heat for 2 minutes, or until warmed through. Garnish with parsley before serving.
