Vibrant carrot soup with ginger, orange zest, and savory chicken stock.
Ingredients:
  • 3 tablespoons butter
  • 1 1/2 pounds carrots (6-7 large carrots), peeled and sliced thin
  • 2 cups chopped white or yellow onion
  • Salt
  • 1 teaspoon minced ginger
  • 2 cups chicken stock or vegetable stock
  • 2 cups water
  • 3 large strips of zest from an orange
  • Chopped chives, parsley, dill or fennel for garnish
Instructions:
  • In a soup pot over medium heat, melt butter and sauté onions and carrots until onions soften, about 5 to 8 minutes. Ensure onions and carrots do not brown. Season with a teaspoon of salt while cooking.
  • Combine the stock, water, ginger, and strips of orange zest in a pot. Bring to a gentle simmer, cover, and cook until the carrots are tender, approximately 20 minutes.
  • Discard the strips of orange zest before puréeing the soup to avoid bitterness.
  • Blend the soup until smooth using a stick blender or a conventional blender. Be cautious when blending hot liquid; fill the blender bowl one-third full and ensure the cap is secure by pressing down with one hand. Adjust seasoning with more salt if needed, especially with homemade unsalted stock or butter. Garnish with chopped chives, parsley, or fennel fronds.
