Creamy carrot-ginger soup with rich vegetable broth.
Ingredients:
  • 2 tablespoons canola oil
  • 1 medium onion, chopped
  • 2 pounds carrots, cut into medium dice
  • 2 teaspoons ground ginger
  • 4 cups vegetable broth
  • 2 cups half-and-half
  • salt and pepper to taste
Instructions:
  • In a large pot over medium heat, sauté onion in oil until tender and translucent, about 5 minutes. Add in carrots, ginger, and vegetable broth. Simmer for 20 minutes until carrots are soft. Remove from heat and let it cool slightly.
  • Blend the mixture until smooth in a blender or food processor. Pour back into the soup pot, stir in the half and half, and heat until warmed. Season with salt and pepper to taste before serving.
