Boost your health with a nourishing ginger and carrot soup perfect for when you're under the weather or in need of a detox.
Ingredients:
  • 0.75 stick unsalted butter
  • 1 large yellow onion, chopped
  • 0.5 cup chopped fresh ginger
  • 5 cloves garlic, minced
  • 7 cups low-sodium chicken broth
  • 1.5 pounds carrots, peeled and cut into 1/2-inch pieces
  • 1 cup dry white wine
  • 1 teaspoon freshly ground black pepper, or more to taste
  • 0.125 teaspoon curry powder
  • 1 tablespoon snipped fresh chives, or to taste
Instructions:
  • In a large pot over medium heat, melt butter until sizzling. Add onion, ginger, and garlic, and sauté until soft, about 15-20 minutes.
  • Combine the broth, carrots, and wine in a pot and bring them to a boil. Lower the heat to medium and simmer uncovered for around 45 minutes, or until the carrots are tender.
  • Blend until carrots are smooth and soup is thick. Stir in lemon juice, salt, pepper, and curry powder. Ladle into large mugs and garnish with chives and freshly cracked black pepper.
