Nutritious carrot juice adds a refreshing twist to make-ahead ginger-lime mules.
Ingredients:
  • 4 cups carrot juice
  • 1 cup pineapple juice
  • 0.25 cup lime juice
  • 2 (12 ounce) bottles ginger beer
  • ice cubes
  • 1 cup vodka
  • Lime wedges
  • Baby carrots, halved
Instructions:
  • Combine the vibrant flavors of carrot juice, pineapple juice, and lime juice in a pitcher. Refrigerate, covered, for up to 24 hours to let the flavors meld and intensify.
  • Just before serving, gently mix in zesty ginger beer. Divinely pour into 8 glasses filled with ice. Enhance each glass with 2 tablespoons of vodka. Decorate with lime wedges and halved baby carrots for a delightful touch.
