Vibrant Asian noodle salad with carrots, green onions, and green beans, tossed in orange zest, sesame oil, soy sauce, and spicy serrano peppers.
Ingredients:
  • 3.5 ounces uncooked linguine pasta
  • 9 ounces fresh green beans, trimmed and cut on the diagonal
  • 0.25 cup lime juice
  • 3 tablespoons canola oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Asian (toasted) sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon grated orange zest
  • 2 small serrano chile peppers, chopped
  • 2 cups carrots, cut into matchsticks
  • 1 cup thinly sliced green onions
  • salt and black pepper to taste
Instructions:
  • Fill a saucepan with salted water and bring to a rolling boil. Add linguine and cook uncovered until al dente, stirring occasionally, for about 11 minutes. Drain in a colander in the sink and rinse with cold water to cool.
  • Bring a pot of gently salted water to a boil. Add green beans and cook until bright green and slightly tender, about 5 to 8 minutes. Drain and rinse with cold water to cool.
  • Combine lime juice, canola oil, soy sauce, brown sugar, sesame oil, garlic, orange zest, and serrano peppers in a large salad bowl. Stir until sugar dissolves. Let it sit for 30 minutes. Add carrots, green onions, linguini, and green beans. Season with salt and pepper to taste. Chill before serving.
