Delight in a quick and healthy Japanese salad you can prep ahead!
Ingredients:
  • 20g dried edamame bean fettuccine pasta
  • 50g podded frozen edamame
  • 1 small carrot, peeled, cut into thin ribbons
  • 10.60 gm gluten-free salt-reduced soy sauce
  • 1/2 tsp sesame oil
  • Pinch of dried chilli flakes
  • 30g baby spinach
  • 50g cooked skinless chicken breast, shredded
Instructions:
  • Combine pasta, edamame, and carrot in a heatproof bowl. Pour boiling water over them, let sit for 5 minutes until pasta is soft. Drain and rinse under cold water. Drain well.
  • Assemble the carrot, pasta, edamame, spinach, and chicken neatly in a 500ml (2 cup) jar or airtight container. Mix soy sauce, oil, and chilli in a bowl, then drizzle over the layered ingredients. Seal the jar and refrigerate until serving.
