Teriyaki chicken and soba salad

Beat midweek blues with this delightful dinner dish.
Ingredients:
  • 125.00 ml teriyaki sauce
  • 4 (150g each) chicken breast fillets
  • 270g packet dried soba noodles
  • 1 Lebanese cucumber
  • 1 large carrot, peeled
  • Canola oil cooking spray
  • 1 small red capsicum, cut into 1cm-thick strips
  • 500.00 ml beansprouts, trimmed
  • 4 green onions, thinly sliced
  • 3 tsp sesame oil
  • 21.00 gm lemon juice
Instructions:
  • In a shallow ceramic dish, pour 1/3 cup of teriyaki sauce. Add the chicken and coat it by turning it over. Cover the dish and refrigerate for 15 minutes.
  • Cook noodles in boiling water as per packet instructions until tender, then drain. Create long, thin ribbons of cucumber and carrot using a vegetable peeler and place in a large bowl.
  • Prepare a large frying pan by giving it a light spray of oil and heating it over medium-high heat. Cook the chicken for 3 to 4 minutes on each side, or until fully cooked. Slice the chicken thinly. Combine the noodles, capsicum, beansprouts, onion, and chicken with the cucumber and carrot. In a separate container, mix the sesame oil, lemon juice, and the remaining teriyaki sauce. Pour this mixture over the noodles and toss everything together. Serve and enjoy!
