Sticky teriyaki meatballs with soba noodles

Try these irresistible teriyaki chicken meatballs with soba noodles for a quick and delicious meal!
Ingredients:
  • 1 garlic clove, crushed
  • 4 green onions
  • 500g chicken mince
  • 187.50 ml panko breadcrumbs
  • 1 egg, lightly beaten
  • 2cm piece fresh ginger, peeled, finely grated
  • 4.50 gm sesame seeds, toasted, plus extra to serve
  • 196.88 gm soy sauce
  • 42.90 gm mirin seasoning
  • 70.95 gm caster sugar
  • 3 tsp sesame oil
  • 36.80 gm vegetable oil
  • 180g dried soba noodles
  • 150g snow peas, trimmed, thinly sliced
  • 1 bunch asparagus, halved lengthways, cut into thirds
  • 21.00 gm lemon juice, plus lemon wedges to serve
  • 25g snow pea sprouts, trimmed, halved
Instructions:
  • Finely chop half of the onions. Mix minced meat, breadcrumbs, egg, garlic, ginger, sesame seeds, and chopped onion in a bowl. Shape level tablespoons of the mixture into balls and refrigerate on a plate for 15 minutes.
  • Combine soy sauce, mirin, sugar, and sesame oil in a bowl, stirring until the sugar dissolves. Set aside 2 tablespoons of the mixture for later use.
  • In a large, deep frying pan over medium-high heat, heat vegetable oil. Brown meatballs in 2 batches, turning occasionally, for about 5 minutes. Transfer to a plate. In the same pan, pour in soy mixture and bring it to a boil. Reduce heat to medium-low and simmer for 3 minutes until slightly thickened. Return meatballs to the pan and simmer for an additional 5 minutes until cooked through and coated in the sticky soy mixture.
  • While the noodles are cooking in a saucepan of boiling water following packet directions, simply add the snow peas and asparagus in the last 2 minutes of cooking time. Make sure to drain well and transfer everything to a heatproof bowl. Then, add lemon juice and the reserved soy mixture, and toss everything together to combine.
  • Slice the remaining green onion thinly and combine with the noodles. Then, divide the noodle mixture among individual serving bowls. Top each bowl with meatballs and sprouts, sprinkle with extra sesame seeds, and serve with lemon wedges.
