Savor the delicious teriyaki chicken paired with soba noodles and crisp snow peas.
Ingredients:
  • 80ml teriyaki marinade
  • 42.00 gm lemon juice
  • 9.00 gm sesame seeds
  • 8 Chicken Drumsticks
  • 270g packet soba noodles
  • 150g snow peas, trimmed, sliced diagonally
  • 20.00 ml mirin
  • 20.00 ml white vinegar
  • 42.00 gm soy sauce
  • 18.20 gm peanut oil
  • 160g cabbage
  • 1 carrot, cut into long strips
  • 2 spring onions, thinly sliced diagonally
Instructions:
  • Preheat your oven to 200C and prepare a large baking tray by lining it with baking paper.
  • In a large bowl, mix together the marinade, lemon juice, 2 tsp sesame seeds, and drumsticks. Transfer to a baking tray and bake in the oven for 40 minutes or until the chicken is cooked through.
  • Cook the noodles and snow peas in boiling water until tender. Rinse under cold water, drain, and transfer to a large bowl. Add sesame seeds, mirin, vinegar, soy sauce, and oil, toss to combine. Finally, mix in the cabbage, carrot, and half of the spring onion.
  • Plate the chicken on top of the noodle salad and sprinkle with the rest of the spring onion.
