Sesame and Sichuan peppercorn chicken noodles: a perfect balance of mellow and spicy flavors.
Ingredients:
  • 4 green onions, trimmed
  • 2 (200g each) chicken breast fillets
  • 440g thin egg-style noodles
  • 1/2 tsp sichuan peppercorns
  • 31.50 gm light soy sauce
  • 1 1/2 tsp sesame oil
  • 1 tsp dried chilli flakes
  • 1 Lebanese cucumber, halved lengthways, thinly sliced diagonally
Instructions:
  • Cut 2 green onions into 4cm long pieces. Add onions and chicken to a medium saucepan and cover with cold water. Bring to a boil over medium-high heat, then reduce to low and simmer covered for 4 minutes until chicken is cooked through. Let chicken stand in liquid for 6 minutes, then drain and discard green onions.
  • Once the chicken has cooled a bit, shred it. Next, place the noodles in a large heatproof bowl and cover them with cold water. Use a fork to separate the noodles. Drain them well. Thinly slice the remaining green onion and crush the Sichuan peppercorns using a mortar and pestle.
  • In a small bowl, mix soy sauce, oil, chili flakes, and Sichuan pepper. Place chicken, onion, and cucumber in a separate bowl. Drizzle the soy sauce mixture over the ingredients and gently toss to combine. Serve and enjoy!
