Crunchy noodle salad with creamy Kewpie mayo dressing.
Ingredients:
  • 1 baby cos lettuce
  • 18.20 gm peanut oil
  • 500g chicken mince
  • 125ml (1/2 cup) Honey and Soy Marinade and Sauce
  • 250g packet qukes (baby cucumbers)
  • 1 avocado
  • 1 carrot
  • 1 long fresh red chilli (optional)
  • 100g packet fried noodles
  • 80ml (1/3 cup) Japanese Dressing Roasted Sesame
  • Fresh coriander sprigs, to serve
Instructions:
  • Preheat a large frying pan over high heat.
  • Once the pan is hot, carefully separate the lettuce leaves and give them a thorough wash. Present them elegantly on a serving platter.
  • Heat the oil in a hot pan, then add the chicken and cook for 3-4 minutes until it changes color. Stir occasionally. Add the sauce and cook for an additional 2-3 minutes until the sauce coats the chicken and excess liquid evaporates. Remove from heat and let it cool slightly.
  • Prepare the ingredients: slice the baby cucumbers, peel and slice the avocado, shred the carrot into long strips, and thinly slice the chili, if desired.
  • Place the chicken mixture, cucumber, and carrot on the platter. Sprinkle over the noodles, top with avocado, and drizzle with sesame dressing. Finish with a sprinkle of coriander and chili, if desired.
