Whip up a speedy vegan soba noodle salad with zesty peanut dressing for a delicious and effortless weeknight meal.
Ingredients:
  • 180g soba noodles
  • 125.00 ml podded frozen edamame
  • 1 large carrot, peeled, halved
  • 1/2 bunch radishes, trimmed
  • 1 Lebanese cucumber, halved, deseeded
  • 1 avocado, finely chopped
  • Chopped roasted peanuts, to serve
  • 70g (1/4 cup) natural crunchy peanut butter
  • 1 lime, juiced
  • 20.00 ml mirin
  • 20.00 ml tamari
  • 2 tsp sriracha chilli sauce
  • 13.60 gm maple syrup
Instructions:
  • Prepare the soba noodles in a saucepan of boiling water according to package instructions, adding the edamame during the final minute of cooking. Drain and rinse under cold water, then transfer to a large serving bowl.
  • Prepare the peanut dressing by mixing all ingredients in a bowl until smooth.
  • Grate the carrot, radish, and cucumber using a food processor with a grater attachment. Combine them in a bowl with noodles, dressing, and half of the avocado. Mix thoroughly, then garnish with the remaining avocado and peanuts before serving.
