Vibrant vegan soba noodle salad with fresh veggies, creamy avocado, and zesty sesame citrus dressing.
Ingredients:
  • 1 lemon, zested and juiced
  • 1 lime, zested and juiced
  • 1 orange, zested and juiced
  • 2 tablespoons rice vinegar
  • 1 tablespoon miso paste
  • 1 teaspoon toasted sesame oil
  • 5.5 ounces soba noodles
  • 1 cucumber, julienned
  • 2 carrots, julienned
  • 1 avocado, sliced
  • 2 green onions, chopped
  • toasted sesame seeds, for garnish
Instructions:
  • Combine the zests and juices of lemon, lime, and orange with rice vinegar, miso, and toasted sesame oil in a small bowl. Set the flavorful mixture aside for later use.
  • 1. Bring a generous amount of salted water to a boil in a large pot. Cook soba noodles until tender, about 5 minutes. Drain and set aside.
  • Layer freshly cooked soba noodles with crisp cucumber, matchstick carrots, creamy avocado, and vibrant green onions. Drizzle with your favorite dressing and finish with a generous sprinkle of nutty toasted sesame seeds. Enjoy warm or chilled.
