Instant Pot vegan soba noodle stir-fry with mushrooms, carrots, bell pepper, and garlic - quick and flavorful!
Ingredients:
  • 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 5 cloves garlic, minced
  • 1 cup sliced cremini mushrooms
  • 2 medium carrots, julienned
  • 1 medium red bell pepper, seeded and chopped
  • 2 tablespoons tamari
  • 1 (10.5 ounce) package dried soba noodles
  • 2.25 cups water, or as needed
  • 1 green onion, finely chopped
Instructions:
  • Preheat your Instant Pot using the Saute function. Once it shows hot, add olive oil and sesame oil followed by garlic. Sauté until fragrant for about 1 minute. Add mushrooms, carrots, and pepper, and cook until softened, approximately 2 to 3 minutes.
  • Create an opening in the center of the pot by moving the vegetables to the sides. Pour in the tamari and soba noodles, then add water until the noodles are barely submerged. Turn off the Saute mode.
  • Securely seal the lid and activate high pressure following the manufacturer's guidelines. Set the timer for 6 minutes and patiently wait 10 to 15 minutes for the pressure to reach its peak.
  • Carefully quick-release pressure following manufacturer's instructions for 5 minutes. Remove lid and toss together sauce, noodles, and vegetables with tongs. Top with chopped green onions and serve promptly.
