Make aromatic Instant Pot mushroom soup for a rich and satisfying meal in no time.
Ingredients:
  • 3 tablespoons unsalted butter
  • 1 pound cremini mushrooms, sliced and coarsely chopped
  • 4 cloves garlic, minced
  • 2 cups chicken stock
  • 0.33333334326744 cup heavy whipping cream
  • 1 teaspoon garlic salt
  • 1 teaspoon dried thyme
  • ground black pepper to taste
Instructions:
  • In a multi-functional electric pressure cooker set to Saute mode, melt butter, then add mushrooms and saute for 3 minutes. Stir in garlic until fragrant. Gradually pour in chicken stock, bringing to a boil while scraping off any browned bits from the bottom of the pot.
  • Seal the lid tightly and set the pressure to high following the manufacturer's directions; cook for 3 minutes. Let the pressure build for 10 to 15 minutes. While waiting, combine cream and flour in a bowl to create a slurry.
  • After releasing pressure following manufacturer's instructions, carefully unlock and remove the lid. Stir in the slurry to combine thoroughly.
  • Turn on Saute mode on the pot and stir the soup until it slightly thickens. Then, mix in the garlic salt, thyme, and pepper.
