Instant Pot wild rice and mushroom dish with rich flavor from chicken stock, herbs, and white wine, pairs perfectly with chicken, pork, or fish.
Ingredients:
  • 0.5 (8 ounce) package baby portobello mushrooms
  • 0.33333334326744 cup diced onion
  • 0.33333334326744 cup diced celery
  • 0.33333334326744 cup diced carrot
  • 1 clove garlic, minced
  • 1 cup chicken stock
  • 1 cup wild rice blend (such as Lundberg®)
  • 0.25 cup dry white wine
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • salt and ground black pepper to taste
  • 0.25 cup chopped toasted pecans
  • 1 tablespoon balsamic vinegar
Instructions:
  • Preheat your multi-functional pressure cooker like an Instant Pot by selecting the sauté function. Heat olive oil until sizzling, then add mushrooms, onion, celery, carrot, and garlic. Sauté, stirring occasionally, until vegetables are tender, about 3 minutes. Turn off the pressure cooker.
  • Combine chicken stock, wild rice, wine, thyme, rosemary, salt, and pepper in the pot. Seal the lid, set pressure valve to sealing, and cook on high pressure for 30 minutes following manufacturer's instructions. Let pressure naturally release for 10 to 15 minutes.
  • Follow the manufacturer's instructions to naturally release pressure for 15 minutes, then carefully quick-release any remaining pressure for about 5 minutes. Unlock and remove the lid.
  • Combine the pecans and balsamic vinegar, then enjoy your delicious dish.
