Enhance oatmeal cookies with orange zest and juice for a unique twist on a classic treat.
Ingredients:
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 1 egg white, beaten until foamy
  • 0.25 cup unsweetened applesauce
  • 1 large naval orange, zested and juiced
  • 1 cup whole wheat flour
  • 1 cup quick-cooking oats
  • 0.75 cup chopped walnuts
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon cream of tartar
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to a toasty 350°F (175°C) and prepare 2 baking sheets with parchment paper.
  • Cream together butter, white sugar, and brown sugar until smooth using an electric mixer. Fold in egg white and applesauce until dough forms. Mix in orange juice with pulp and orange zest.
  • In a separate bowl, combine flour, oats, walnuts, baking soda, cream of tartar, and cinnamon. Gently fold the mixture into the dough until well combined.
  • Scoop generous spoonfuls onto lined baking sheets.
  • Bake in preheated oven for 10 to 12 minutes until the bottoms of the cookies are lightly browned. Let cool on baking sheets for 2 to 3 minutes before transferring to wire racks to cool completely.
